Smoked Salmon Omelette
INGREDIENTS

Eggs
-
1 slice of smoked salmon
-
1/2 handful tomato, sliced

1 tablespoon dill, diced fresh or dried
-
1 tablespoon sour cream (low fat)

Cracked pepper and sea salt to taste

1 tablespoon olive oil
METHOD

Preheat the grill, whisk eggs and dill,
-
Add salt and pepper to taste.

Pour mixture into oiled fry pan (medium heat) to form a thin layer.
-
Cook for one minute in the pan and one minute under the grill.
-
Once cooked place the omelette on a plate and place salmon, sour cream and slice tomato on one half of he omelette, garnish filling with dill, and fold to form a triangle.
